
This past weekend, I braved the Chicago heat, along with two of my colleagues, Miguel Molina and Lauren Nortier, and headed to the Taste of Chicago in July, 2026. When one of the world’s most iconic food festivals happens in our backyard, we consider it part of the job to go see what’s getting people excited (and, of course, taste as much as possible)!
Since its debut in 1980, the Taste of Chicago has grown into one of the largest culinary celebrations, bringing together local restaurants, food trucks, and chefs to serve hundreds of thousands of hungry visitors. Beyond being a celebration of Chicago’s vibrant food scene, it’s also one of our favorite places to spot emerging menu trends.
Here are four trends that caught our attention:
1. Fresh Takes on Familiar Favorites
Comfort food remains as popular as ever, but consumers are increasingly looking for familiar favorites that offer something unexpected. Classics like mac & cheese and loaded fries were found throughout the festival, with vendors setting themselves apart by using premium ingredients and bold flavor combinations.
One standout item we all sampled was Happy Lobster’s Lobster Mac & Cheese Bites, which transformed a classic comfort dish into an indulgent, portable snack. One of my personal favorites was Cebu Chicago’s Longanisa French Fries, where savory Filipino sausage gave loaded fries a creative and flavorful twist. Across the festival, we also saw smoked brisket, baked beans, an array of sauces, and even Flamin’ Hot Cheetos used to reinvent everyday comfort foods into inventive new menu items.

2. The Mexican Fusion Movement
Mexican flavors continue to be one of the most versatile foundations for culinary innovation. This year, we saw Mexican influences appear across a wide range of globally inspired dishes – from Butter Chicken Elote and Birria Ramen to Bulgogi Steak Seoul Tacos and Jerk Chicken Tacos.
A delightfully unexpected standout was the Butter Chicken Elote from Tandoor Char House, a creative fusion that paired classic Mexican street corn with rich, creamy Indian butter chicken, finished with Cotija cheese and a squeeze a of fresh lime. Lauren N. noted that the Cotija cheese added a distinctive layer of flavor that elevated the dish in a way she hadn’t anticipated, making it one of the most memorable combinations we tried.

3. Flavors of the African Diaspora
Among the most exciting discoveries was the growing presence and representation of African cuisine throughout the festival, which was highlighted by Miguel, our unofficial Chief Foodie Officer and resident sous chef. While longtime festival favorites continued to draw crowds, it was refreshing to see more vendors introducing guests to the unique culinary traditions and vibrant flavors of Senegal and West Africa.
Badou Senegalese immediately caught our attention with its distinctive menu. We tried the Chicken Pastels, and they quickly became one of our favorite bites of the day. These golden, crispy pastries featured a flaky exterior wrapped around a perfectly seasoned chicken filling and were finished with a sweet jerk glaze. The result was a harmonious blend of savory and sweet flavors that made every bite exceptional and left a lasting impression.

4. Corn, Corn, and More Corn
Making our way through the event, we noticed that corn was everywhere, with many attendees enjoying classic corn on the cob, elote, and a variety of creative corn-based dishes. Vendors put their own unique spins on this beloved staple, offering exciting variations like Mexicali Corn on the Cob, Mediterranean-Inspired Corn on the Cob, and Flamin’ Hot Cheetos Mexican Street Corn. These creations showed how a familiar favorite could be reimagined with exciting combinations and global influences.

As we continue to explore emerging trends and track how consumer preferences evolve, the Taste of Chicago remains one of the best places to discover what’s resonating with diners and where the food industry may be headed next. We left the festival inspired by the creativity and cultural influences behind every dish we tried, and we’re already looking forward to seeing what new flavors, combinations, and culinary surprises await next year!
